Hopefully since the Persona characters got put up for PO Saber will come up soon :)
Also was thinking about the same thing, especially both Alter and Nero got prototypes revealed way much sooner, while OG Saber doesn’t even have one yet.
Even Makoto and Futaba from P5 have their prototypes now. Saber has become the oldest PuP figure that got announced without any progress yet, maybe they are preparing Saber for something special… (I wish lol)
I'm guessing it probably has to do with Aniplex not willing to sign off on the PUP since they just released their very similar ConoFig version of Saber. Hopefully we'll get her soon since that figure has already been released.

People might complain that 'we already have loads of Saber figures!' but I've always wanted something of her in her classic armour and this could be the perfect option since it'd be affordable and not take up a lot of space.
